Food waste valorisation is a popular topic nowadays. The circulation of food surplus and side-streams in China is still at the stage of exploration. This research will identify the most significant food surpluses and side-streams in China’s Food System, and find the potential valorisation methods for them. The sustainability performance and technical feasibility evaluation of those methods will verify whether the treatment should comply with the food waste hierarchy. Then, food characteristics and valorisation methods will be built as two distinct data sets, a tool will be developed based on the data mapping between these two data sets to support decision-making on food waste valorisation strategies. This tool will be applied to a selected area in China to verify its effectiveness, and explore the impact of non-technical factors, such as market, culture, climate, on valorisation decision-making.
